Best Sparkling Sake
A delicately crafted brew, the Dassai 45 Junmai Daiginjo Sparkling Sake is world renowned. Coming from the same brewery that produced the Dassai 23 “perfect” sake, the Dassai 45 is sparkling and thus, refreshing!
Coming in the form of a light nigori sparkling sake, the Dassai 45 nigori is created similarly to the champagne method. This means that the second fermentation of the sake takes place inside the bottle. As it is naturally fermented in the bottle, it tastes of fruitiness and a refreshing finish is very evident.
The nigori style is a reflection of the original premium Dassai 45. The Dassai 45 Daiginjo sake is actually used as a base for the nigori style. Smooth and fragrant, this tasty nigori has a distinguished and vivid flavour.
Produced by Asahi Shuzo Company, the Dassai range of sake is a pioneer in the industry, introducing sake as a premium alcoholic drink to the world. The rising popularity of Dassai generally is just a testament to how good the sake is.
The number behind the sake word “Dassai” refers to the seimaibuai or rice polishing ratio. The remaining percentage of each grain of rice after it has been polished is the number, in this case, 45. However, it was only recently when the producers of this best sake decided to bring down the polishing ratio from 50 to 45 to set themselves apart from other junmai daiginjo. Now, Dassai 45 is known as the better version of Dassai 50 and is also known as a premium sake for its quality and engaging flavours.
The Dassai 45 has a stronger aroma than the Dassai 23 and Dassai 39. Seeing as the second fermentation takes place in the bottle, the “sparkling effect” comes from the natural fermentation process with no added sugar. Only the rice and koji is fermented. The Dassai 45 nigori (sparkling) is equal to brut nature champagne.
Most Dassai 45 Junmai Daiginjo Sparkling Sake reviews give glowing comments. People who have tasted this sake really enjoy the complex yet harmonious aroma and recommend the sake be enjoyed chilled on a hot summer day. It is suitably paired with dishes with strong flavours.
You will be able to enjoy the fruity floral aromas. On the palate, notes of apples, oranges and pears will cycle through your mouth. The finish is rather sweet with a clear finish.
